Ten years ago, Dympna Corish swapped hotels for her hometown, opening Trimmers Lane Café (TLC) just off the main street….The eatery quickly became known for its welcoming atmosphere and distinctive menu that Chef Jay La Roche has expertly crafted, locals refuse to let his Korean Burger leave the menu. Dympna said “We’ve tried to take it off and change the menu, much to the dismay of our customers, so it’s there to stay forever.” The team in the kitchen keep delivering colourful, punchy dishes like loaded fries and the Vegan Buddha Bowl
Dympna built a spot where regulars have become extended family…
“Our customers here have become our extended family, we see the same faces every day, we know their children, we know their families.” Ten years on, she credits the café’s success to the team, especially Laura Jenkins and Jay.
A decade down, and its fair to say this team hasn’t lost sight of why it started: great food and genuine people. It’s as simple as that really.
